機體防御體系的抗氧化能力的強弱與健康程度存在著密切，該防御體系有酶促與非酶促兩個體系，許多酶是以微量元素為活性中心，例如：超氧化物歧化 酶（SOD）、*過氧化物酶（GSH-PX）、過氧化氫酶（CAT）、*S-轉移酶（GST）等，非酶促反應體系中主要為維生素、氨基酸和金 屬蛋白質。例如：VE、胡蘿卜素、VC、半*、蛋氨酸、*、*、葡萄糖、銅蘭蛋白、轉鐵蛋白、乳鐵蛋白等。這個體系的防護氧化作用主要通過三 條途徑：（1）消除自由基和活性氧以免引發脂質過氧化；（2）分解過氧化物，阻斷過氧化鏈；（3）除去起催化作用的金屬離子。防御體系各成份之間相互起到 了協同作用，以及代償作用與依賴作用。
